Turnips Baked with Cream and Parmesan

Sweet, oven roasted turnips with Parmesan, cream and chives make a great side dish that goes well with any meat, especially beef and pork. While this recipe calls for a cup of cream to par-cook the turnips in, half of it is left in the pan, which makes the recipe much lighter that it seems. Use small, firm turnips and discard any with tough, woody interiors, as their texture and taste will be off.

Don’t worry about the cream and cheese if you’re lactose intolerant, as the recipe has less than 2 grams of lactose per serving. According to “Food Intolerance Management Plan”, by Sue Shepherd, most people with lactose intolerance can handle about 4 grams of lactose per serving of food without experiencing problems (page 29). Cream has less than 1 gram of lactose per tablespoon. There is almost no lactose in aged Parmesan cheese. Since there’s about 2 tablespoons of cream per serving in this recipe (based on 4 servings, with half of the cream left in the pan), that’s less than 2 grams of lactose per serving. You may substitute lactose-free cream if it’s available in your area. As always, only eat what your body can tolerate, and only you know what that is.

Turnips Baked with Cream and Parmesan

Serves 4 – 5, adapted from the Silver Spoon

1 cup (240 ml) cream
12 small turnips, peeled and thinly sliced
2/3 cup (160 ml) Parmesan cheese, freshly grated
1/2 cup (120 ml) chopped fresh chives
Dash of salt and pepper

Arrange the oven racks so one is in the upper third of the oven and the other is in the lower third.  Preheat the oven to 375 degrees F° (190° C). Cover two rimmed cookie sheets with heavy-duty foil. Pour the cream into a large pot, add the turnip slices and bring it to a boil. Cook for 3 to 4 minutes, stirring a couple of times.

Use a slotted spoon to remove the turnips and arrange them on the baking pans in a single layer. Sprinkle them with the Parmesan and chives, then lightly season with salt and pepper. Bake until the Parmesan begins to brown, about 10 – 15 minutes. Use a pancake turner to transfer the turnips to a serving dish.
